From the Wood Stove to Your Stove

CRANRAISIN MUFFINS - Always a popular choice for early morning snack on our schooners!

2 C       flour

1/4 C    sugar

1 T       baking powder

1/2 t     salt

1          egg

1 C      milk

3 T      melted butter or oil

1/2 C   Cranraisins (softened in hot water & drained)

2 T      orange peel, grated

Preheat oven to 350 degrees

In a medium bowl, sift together flour, sugar, baking powder and salt.  Set aside.

Blend together egg, milk and butter.  Add to flour mixture, Toss in Cranraisins and grated orange peel.  Mix gently. 

Bake in greased muffin tins for approximately 20 - 25 minutes.

For extra crunch on muffin tops sprinkle with sanding sugar before baking
