FROM THE WOOD STOVE TO YOUR STOVE
Happy St Patrick's Day!
With St. Patrick's Day coming up this weekend you may well be wondering what to do with some leftover Corned Beef- Great for breakfast with eggs, or lunch & dinner with a salad!
CORNED BEEF HASH - serves 6 - 8
4 c potatoes, cooked (leftover)
2 c corned beef (leftover)
1 lg onion
1 T oil
Mash potatoes and corned beef together in a larg pot. Add onion & egg and continue to mash. Season with pepper.
Heat oil in a skillet and fry the hash mixture. Serve with eggs or a salad for dinner or lunch.
