From the Wood Stove to Your Stove


Chocolate Velvet Cake                                       Makes 1 cake

1 1/2 t            baking soda

1/3 c              cold water

1/2 c              butter

1 3/4  c          sugar 

1 t                  salt

1 t                  vanilla

1/2 c              cocoa powder

1/3 c              cold water

2 1/2  c          flour

1 c                 cold water

3                    egg whites


Preheat oven to 350' F

In a small bowl, combine baking soda and 1/3 cup cold water. Stir and set aside.

Cream butter and 1 cup sugar in a medium bowl.

Blend in salt and vanilla.

In a separate bowl, mix cocoa with 1/3 cup cold water. Beat into a creamed mixture. Add flour alternately with 1 cup cold water

In another bowl, beat egg whites until soft peaks form, then beat remaining ¾ cup sugar. Fold into batter. Add baking soda mixture. Mix well.

Pour into greased pans, either two 9" cake pans or one 9 x 13. Bake for 30 minutes. Cool and frost, using following recipe.


Cocoa Frosting

1/4 c              butter

3 1/2 c           confectioners' sugar

1 1/2 t            vanilla

1/2  c             cocoa powder        

1/4  t              salt

1/3 c               milk


Combine all ingredients and beat together until well blended.
