Lemon Loaf

MAINE WINDJAMMER CRUISES COOKBOOK

1/2 C           butter softened              

1C               Sugar

1                  egg

1- 1/2 C       flour

1 t                baking powder

1 T              lemon peel

1/2 C           milk

 

Topping

1/3 C          sugar

1/4 C          lemon juice

 

Preheat oven to 350° F.

                Cream butter and sugar together in a large bow.. add egg and stir well.  Set aside

                Sift flour and baking powder, then add lemon peel. Set aside.

                Add flour mixture and milk alternately to butter mixture. Mix well  Pour into greased loaf pan. 

                Bake approximately 45 minutes. cool on rack.

                Mix sugar and lemon juice and poor over bread before slicing.
