From the Wood Stove to Your Stove


PECAN BABY GREEN SALAD

 

1 lg bag assorted baby greens

1/2 c gorgonzola cheese

1/2 c pecans, chopped

3/4 c apple, chopped

1/4 c cranraisins

Wash greens and place in bowl. Sprinkle cheese, pecans, apples, and cranraisins on top. Toss lightly and serve with Maple Dijon Dressing.

 

 

 

MAPLE DIJON DRESSING

 

1/4 c extra light olive oil

1/2 c salad oil

2 1/2 T Dijon mustard

3 T dark Maine maple syrup

2 T red wine vinegar

1/4 c half & half

1 garlic clove, diced

 

Whisk all ingredients together. Let the dressing sit for at least one hour or overnight to allow flavors to develop. Makes 1-1/2 cups.
