FROM THE WOOD STOVE TO YOUR STOVE


APPLE PIE     

6 c           apples, sliced

1 T          lemon juice

2/3 c      sugar

2 T          flour

1/8 t       salt        

1 T        cinnamon

dash      nutmeg

1           recipe for pie dough (2 crust)

1/4 c      butter

Preheat oven to 350°

Roll out half of the dough and place in 9" pie plate. Bake 5 minutes, then cool

In a large bowl combine apples with lemon juice.

In a separate bowl, mix sugar, flour, salt, cinnamon and nutmeg.  Pour over apples and toss gently.

Place mixture in cooled pie shell. Dot with butter. Roll out the remaining dough and place on top. Crimp top and bottom cruises together. Make vent holes on top cruise with fork.

Bake for 1 hour

PIE CRUST    

2 c       flour    

2/3 c    shortening

1/3 c    cold water

Preheat oven to 350° F.

Measure flour into large bowl, cut in shortening. add water until dough can be formed into a ball. Knead gently on floured board.  Break in half for 2 balls.

Using a rolling pin, roll dough into shape of inverted pie pan and a bit more. Carelully fold over and place in 9" pie pan.  Crimp dough around edge of pan.

Bake for 5-10 minutes, or until light brown, before adding pie filling.

Roll your second ball for top crust.
