2016 A YEAR OF MILESTONES FOR MAINE WINDJAMMER CRUISE
From the Wood Stove to Your Stove
This deliciously moist chocolate cake is always a favorite when served on board.
CHOCOLATE ZUCCHINI CAKE
3 sqs Unsweetened Chocolate
1 1/2 C oil
3 C sugar
1 t vanilla
4 lg eggs
3C flour
1 1/2 t baking powder
1 t baking soda
1 t salt
3 C zucchini
Preheat oven to 350 degrees F
On stovetop in a large sauce pan, melt chocolate and oil together, blending in the sugar. Add vanilla and beat in the eggs one at a time. Set aside.
In a large bowl, sift together the flour, baking powder, baking soda and salt. Pour the liquid mixture into this and mix gently. Stir in the zucchini.
Bake the cake in a 9x13 greased baking pan for 36 minutes or until done. Sprinkle with confectioners' sugar or top with a chocolate frosting.
