From the Wood Stove

Recently a passenger asked us to send him our Tomato Soup recipe.  Since it's not in the Maine Windjammer Cruises cookbook we thought we'd share it with all of you!  

Tomato Soup                                                                    

1                          large onion diced                              

1            C           celery diced

2                          large carrots diced

1            T           olive oil

1  #10   can crushed tomatoes

4-6        C            chicken broth

½           t            salt

⅛           t            thyme

¼           C           parsley

½           C           rice or orzo macaroni

1                          can evaporated milk

Sauté onion, celery and carrot in oil until soft.

Add tomatoes, broth, salt, thyme, parsley and rice.

Bring to a boil and then simmer for one to two hours.

Add milk right before serving.
